The short answer
Buddha Jayanti, usually in May, marks the birth of the Buddha. The most meaningful places to be are Lumbini and Swayambhunath, where pilgrims light butter lamps and monks lead processions. It is calm and devotional, not loud.
Ghode Jatra, in March or April, is the horse festival in Kathmandu. Horse and cavalry displays take place at the Tundikhel grounds, with the Kumari and officials in attendance. It is a fun, family-friendly spectacle and an easy way to see local life.
