The short answer
Several well-known walks start and end within a day: Nagarkot to Changu Narayan, a gentle three-hour walk with views and old villages; Sankhu via Bajra Jogini to Nagarkot, a longer day; Nagarjun forest to the Jamacho stupa viewpoint; Gokarna to Kopan monastery and Boudhanath; Kirtipur to Chobar to Patan, and Pharping with its Tibetan Buddhist cave shrines.
Choose by interest: culture, views or forest. A taxi or driver can drop you at the start and meet you at the end. Go in the cooler months, take water, and hire a local guide for less-marked trails. Phulchoki, the highest hill rim of the valley, is known for spring flowers.
