The short answer
Sadhus and monks are respected religious figures. Greet them with namaste, speak softly and ask before photographing. Sadhus at famous temples sometimes expect a donation in return for a photograph, so decide beforehand whether you want to offer one and agree before you take the picture.
Monks in monasteries and at stupas are happy to answer polite questions if they have time. Do not touch them, do not offer food or hand objects to a monk directly, and do not point your camera at prayers or ceremonies without permission. Your guide can introduce you properly.
