The short answer
Nepal lists nine Ramsar wetlands, which are wetlands recognised as important for birds and biodiversity. In the lowlands they include Koshi Tappu, Beeshazari and associated lakes in Chitwan, Jagdishpur Reservoir and Ghodaghodi Tal. In the mountains they include Gokyo lakes, Phoksundo, Rara and Gosainkunda, plus Mai Pokhari in the eastern hills.
For visitors, these are some of the best places for birds and quiet scenery. Several can be visited as part of other trips, such as Gosainkunda on a Langtang area trek and Gokyo near Everest. Lowland wetlands are best for migrant birds in winter and spring.
