The short answer
Ask for the menu with "menu dinuhos" and order with "malai ... chahiyo" (I want ...). For vegetarian, say "ma shakahari hu" in Nepali and "main shakahari hoon" in Hindi. For less spicy food, say "piro nahalnuhos" (do not put spice). Ask for the bill with "bill dinuhos".
Know the main words: bhat (rice), dal (lentils), tarkari (vegetables), masu (meat), chiya (tea), dudh (milk) and pani (water). Spellings are simple transliterations; sounds vary by region and speaker.
