The short answer
Start with dal bhat, the lentil soup, rice and vegetable curry plate that is refilled until you stop it. Then try momo dumplings, thukpa noodle soup, sel roti, sukuti (dried meat), chatamari and, in Newar homes, dishes such as choila and bara. Thakali set meals from the Mustang region are a favourite of many travellers.
Sweet tea (chiya) accompanies almost everything. In Bhaktapur, juju dhau, the king of curds, is a must. Vegetarian options are widespread, especially in temple areas.
